Produce grown in healthy, living soil tends to ferment more consistently, develops more complex flavours, and often has a more active microbial community to begin with. It's one of those things that's hard to quantify, but you definitely notice it when you're fermenting every day.

It makes sense. If there is more diversity in the soil it seems logical that there are more microbes on the produce.
